A light summer salad that blends a number of flavors to tempt any palate. A light summer salad that blends a number of flavors to tempt any palate.

Ingredients

    1/2 cup boiled beets, cooled and cubed
    1/4 cup walnut pieces
    2 oz goat cheese, crumbled
    1 medium Granny Smith apple, cubed
    2 1/2 cups Arugala
    1 tsp olive oil
    2 tbsp balsamic vinegar

Directions

Place all ingredients except goat cheese in a bowl. Toss lightly. Top with goat cheese and serve.
