Ingredients

    * Mori-Nu, Tofu, silken, 1 package (4 servings)
    * JELL-O Sugar Free-Fat Free Instant pudding (4 servings pack). Flavors that work: White Chocolate, Cheesecake, pistachio, butterscotch
    * Almond Breeze Almond Milk, Unsweetened Vanilla, 8 oz
    * LaTortilla Factory Low Carb High Fiber Tortillas, 4 serving

Directions

Drain the tofu. This can be done by slicing it width wise in to two pieces, putting it between some paper towels and pressing it down with some weights. I usually use heavier weights and leave it for about 30-60 minutes.
In a big bowl combine combine the Almond Milk and the instant pudding mix. At first whisk by hand to combine the powder and milk.
Once it is combined add the tofu and mix with a blender for about 5 minutes. Start on slow speed and increase to max as tofu and the mix combine. I usually start with regular blender attachments and then finish off with a whisk attachment. This makes the final mix a good creamy consistency.
Split the resulting mix in to four servings and let it kool in the fridge for a few hours.
Once it is cooled spread them on the tortillas and enjoy. For extra deliciousness I add a sliced banana when I spread the mix in on the tortilla.
