Introduction
No sugar or oil!!! Lecithin replaces oil!!I make this recipe and keep the dry mix on hand for when I want to make pancakes in the morning. Having all of the dry ingredients pre-mixed cuts down on the time to cook in the morning before work. No sugar or oil!!! Lecithin replaces oil!!

Ingredients

4 cups quick cooking oats
2 cups wheat flour
1 cup all-purpose flour
1-cup spelt flour
1-cup non-fat dry milk
4 tablespoons cinnamon
5 teaspoons salt
3 tablespoons baking powder
8 Tablespoons dry whole eggs
6 Tablespoons Lecithin
Ingredients to add to 2 cups Dry Mix:
1.125-cup water
Directions
1. Combine all ingredients and stir to mix well. Store in refrigerator. Makes about 8 cups dry mix.
2. In a medium mixing bowl, alternately beat in 2 cups plus 2 tablespoons pancake mix, and 1.125 cup of water plus 4 tablespoons.
3. Pour in large spoonfuls into a lightly greased skillet over medium-high heat, and cook until the tops show broken bubbles, about 2 to 3 minutes.
4. Turn and cook about 2 to 3 minutes more, until golden brown.
1 serving = 1 pancake
2 cups plus 2 tablespoons of dry mix will make 10 pancakes
