Introduction

A twist on a regular tuna melt! This recipe uses chipotle mayo (I have a recipe posted for that as well) and extra chipotle peppers. The peppers can be found in the mexican food aisle at your grocery store and you can add as many or as few as you want to control the heat. A twist on a regular tuna melt! Ingredients

    8 slices of texas toast
    8 slices of cheddar or colby jack cheese
    10 oz tuna, packed in water
    4 tbsp chipotle mayo
    2 stalks of celery, chopped
    1/4 onion, chopped
    chopped chipotle peppers to taste
    salt and pepper to taste

Directions

Mix tuna, chipotle mayo, chopped celery, chopped onion, chopped chipotle peppers salt and pepper in a bowl.

Toast each slice of texas toast.

Spread tuna mixture onto slices of toast and place on baking sheet.

Top each tuna topped piece of toast with a slice of cheese.

Place baking sheet in oven set to broil until cheese is melted.
