This soup can be eaten alone as a meal (2 servings), or divide in two for a side dish. It is thick so it doubles as a delicious sauce over brown rice. Eliminate the chicken for a decadent vegan dish. Ingredients

    Pacific Natural Foods Curried Red Lentil Soup, 1 cup
    Frozen Leaf Spinach, .25 cup
    Cooked cubed chicken breast, 2 oz.
    Natural Peanut Butter, chunk style, 1 Tb
    Yellow curry powder, 1 tsp
    Garlic chutney, 1 tsp*
    Dash Cayenne pepper**

Directions

Add all ingredients to a saucepan and heat through. Can also be heated in the microwave.

Makes 2 servings of about 1 cup each

*minced garlic can be used in place of garlic chutney
**Cayenne pepper is HOT! Use sparingly
