Introduction

Adapted from Oxygen Magazine. Also, I buy precooked, chopped spinach that is frozen in small 20 gram cubes in d stored in a resealable bag. Ingredients

    1 whole egg
    3 egg whites
    1/4 cup low fat milk
    1/4 cup (about 40 grams) cooked, chopped spinach
    85 grams of capocollo ham (thin sliced)
    30 grams of low fat, sharp cheddar, grated

Directions

Preheat oven to 350 degrees. In a bowl, scramble the egg, whites and milk together. Add thawed spinach. Stir.
Spray a 6 cup muffin tin with cooking spray. (You will only use 4 of the cups) Line the cups with the capocollo ham slices. Divide the egg mixture among the muffin cups. Place in oven for 15-20 minutes. Top with cheese and cook for another 5 minutes.

Serves 2 (2 each)

    Awesome recipe! Easy to fix (kids would probably like making and eating it) and is very appealing to the non-dieting part of the family. Used fat free milk; milk seems to make the eggs pretty fluffy (yum). Also used chopped bell pepper and chives as we had no spinach the day we made it. - 12/16/09

    Made this but didn't have the ham so used Chicken Apple Sausage, bell pepper, baby bel mushrooms, and a sprinkle of Moz cheese. They smell wonderful!!! I'm hoping the kids will love them!!! - 2/3/12
