Introduction
I tweaked this recipe from one I read on FamilyFun's website. It's easy and healthy, and a great dinner for busy nights. Ingredients

4 Boneless, skinless chicken breasts (about 6 oz. ea.)
2 tbsp. Olive Oil
1 can (about 2 cups) pineapple chunks, in juice
1/4 C. brown sugar
3 tbsp. soy sauce
1/4 tsp. paprika
1 tsp. ground ginger
1/2 tsp. kosher salt
1 tbsp. flour
Directions
Cut chicken into one-inch pieces. Saute over med-high heat in olive oil, until chicken is cooked through. Once chicken is done, remove from skillet and set aside.
Wipe skillet clean, and add pineapple with juice, brown sugar, soy sauce, paprika, ginger and salt. Return to medium heat and cook for 2 minutes. Whisk in the tablespoon of flour, and return chicken to pan. Allow sauce to thicken slightly, about 2 minutes. Serve with rice.
