Ingredients

    1/2 cup skim milk
    1/2 cup water
    2 Tbsp vinegar
    1 1/2 cup Kellogg's Original All-Bran (I substitute Fiber One)
    1 cup flour
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp ground cinnamon
    1/4 cup SPLENDA
    1 medium banana
    3 egg whites
    1/2 cup unsweetened applesauce
    1/4 cup semi-sweet chocolate chips

Directions

Combine milk, water and vinegar. Mix in all bran. Let sit for 20 minutes. Mix together all dry ingredients in separate bowl. Add 1 mashed banana, 3 egg whites and applesauce to bran mixture. Add dry ingredients to bran mixture and mix with spoon. Fold in chocolate chips. Spritz muffin tins with Pam Bake at 375ยบ for 18 - 20 minutes.

    Incredible!
    I substituted 1/4 c applejuice for the apple sauce and used white sugar instead. I also added 1/4 c walnuts, and dried cranberries. I used apple cider vinegar instead of white. - 10/8/11

    This muffins are sooooo good! They are really moist and so tasty it's hyard to believe they're low in calories and fat! I make a batch every couple of weeks - 3/14/08
