Ingredients

    1 pouch (8 to 9 oz) Uncle Ben's Ready Rice
    1 Tbsp. olive oil
    1/2 cup chopped bell pepper (red, green or tri-color)
    1 large egg, beaten in a small bowl
    2 tsp. soy sauce
    2 or 3 green onions, chopped, including tops

    OPTIONAL INGREDIENTS: 1/2 cup chopped mushrooms, 1/2 cup chopped celery or 1/2 cup carrots, julienne cut.

    1- Heat rice in microwave according to package directions
    2- Heat oil in a large skillet or wok over Medium-High heat. Stir-fry bell pepper, plus any "optional Ingredients", 2 minutes or until crisp-tender.
    3- Remove to a plate. Add beaten egg to same skillet; cook 1 minute or until set, while breaking up egg with a cooking spoon.
    4- Add rice & vegetables back to skillet; toss and stir-fry about 30 seconds or until hot. Add desired amount of soy sauce. Season rice, according to taste. Top with chopped green onion & serve.
