Introduction
These muffins wonderful in the morning. I cut the sugar down by half, so if you like your muffins really sweet you may want to add a little more sugar. They go great with coffee!! Ingredients

1 cup Bob's Red Mill 8-Grain Cereal
1 1/4 cup Milk
1 Egg
1/4 cup Splenda Brown Sugar
1/3 cup Smart Balance Light
1 tsp vanilla
1 cup Whole Wheat Flour
1/2 tsp Salt
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp cinnamon
2 Tbsp ground flaxseed
1 cup shredded carrots
1 med apple, shredded
1/2 cup raisins, soaked in hot water for 10 min then drained
Directions
Mix 8 Grain Cereal and milk; allow to stand for 10 minutes while preheating oven and assembling other ingredients. Cream egg, butter, vanilla, and sugar together.
Add dry ingredients and milk with cereal to egg mixture. Stir only until combined. Stir in carrots, apples, and raisins. Spoon into well greased muffin pan. Bake in 400° F oven for 15-20 minutes. These muffins are crumbly so I would not recommend using cupcake liners, they will fall apart when you try to take them out.
Makes 18 muffins.
These are delicious w/brown butter (not included in nutritional info)!! To make brown butter, cream together 2tbsp smart balance w/1/4 tsp cinnamon & 1/2 tsp brown sugar! Yum!!
