This is so easy to put in the crockpot so you have a delicious meal waiting for you. I use individual frozen chicken tenders or breasts so you'd have to adjust cooking for fresh. Ingredients

    1.5 lb chicken breast (I use frozen)
    1 can black beans drained and rinsed
    1 can sweet corn
    1 large jar salsa
    1/2 block reduced fat cream cheese optional

Directions

put everything in a crock pot and cook on high for at least 4 hours. top with cream cheese and stir to help it melt throughout.
