Introduction

Easy beef stew/pot roast. I like to start it at night, add the veggies in the morning and have it kept warm all day just in time for dinner when I get home from work Easy beef stew/pot roast. Number of Servings: 12

Ingredients

    * 1 lb. stewing beef or roast (I use the pre-cut beef from the
    grocery store)
    * 1 - 2 cups red wine
    * 2 tbsp minced garlic
    * 1 can low sodium beef broth
    * 1 can low fat cream of mushroom soup
    * Potatoes (4 large, peeled and cut up)
    * 1/2 package baby carrots
    * 4 cups slivered mushrooms
    *1 large onion, chopped
    * 1 cup quick barley
    * salt, pepper and seasoning as you wish

Directions

Put wine, garlic and beef in crock pot. Cook on high for 3 - 4 hours or until beef is cooked through.

Add carrots, mushrooms, potatoes, onion, beef broth and mushroom soup. Cook on high for 1.5 - 2 hours. *you may need to add water here and there.

Add barley and cook for 30 min.

Makes roughly 12 1 cup servings.
