Ingredients

    Zuchinni, fresh, shedded, 3 cup
    Egg, fresh, 3 large
    Canola Oil, 1.5 cup
    Mayonnaise, regular, 1/4 cup
    Sour Cream, 1/2 cup
    Salt, 2 tsp
    Sugar Substitiute (like Splenda), 1 3/4 cups

    Separate Bowl Mix:
    Soy Flour, 1.5 cup
    Whole Wheat Flour, 1.5 cup
    Flaxseed Meal, 3 tbsp
    Baking Powder, 2 tsp
    Baking Soda, 1 tsp
    Nutmeg, ground, 1 tsp
    Cinnamon, ground, 2 tsp
    Wanuts, chopped 1 cup

Directions

Preheat oven to 350 degrees
Mix Zuchinni with wet ingredients, plus sugar substitute
set aside

In Separate bowl sift or mix dry ingredients
Stir together, batter will be very stiff
Fold in walnuts
Spoon into 2 greased. floured bread pans
Bake 80-90 minutes at 350 degrees
Test for doneness when knife comes out clean
