Introduction

This recipe comes from my mother-in-law. This recipe comes from my mother-in-law.
Number of Servings: 8

Ingredients

    1/2 lb. lean ground beef
    1 can (16oz.) refried beans
    1/2 chopped onion
    1 can (4oz.) green chilis
    1 can (8oz.) tomato sauce (no salt added)
    1 can (4oz.) chopped black olives
    1 lb. shredded cheddar cheese
    12 small or 8 large tortillas (I used Ole Extreme wellness tortillas. They are wheat tortillas and have lots of fiber.)

Directions

1. Cook beef and onion, drain.
2. Combine beef and onion with the rest of the ingredients (except cheese and tortillas).
3. Place half of the tortillas on the bottom of a sprayed 9 X 13 pan.
4. Spread half the meat mixture on the tortillas
5. Sprinkle half of the cheese
6. Repeat the process.
7. Bake in a 350 degree oven for about 20 minutes or until the cheese is melted.
8. This makes 8 servings.
*Can serve with enchilada sauce, but you will need to add the nutritional information to this recipe.*
