Ingredients

4 slices thick-cut bacon
1 tbsp packed brown sugar
1/2 tsp coarsley ground black pepper
1 package (6 oz) fresh baby spinach
1 medium granny smith apple, cored and sliced thin
1/4 cup thinly sliced red onion
Dressing
1 tbsp bacon drippings
2 tbsp brown sugar
2 tsp dijon mustard
Directions
1. Arrange bacon slice in single layer on a plate, sprinnkle with brown sugar and black pepper. Microwave on high 3-5 minutes or until crisp; drain on paper towels reserving 1 tablespoon of bacon grease. cut bacon into 1/2 inch pieces.
2. Wash spinach then spin in salad spinner to remove excess water. In a large bowl combine spinach, apple and onion. Whisk reserved bacon grease, brown sugar, vinegar and mustard until blended. Microwave on high 2 minutes or until bubbly. Pour over spinach then toss gently to coat. Season with salt and pepper. Top salad with egg and bacon.
