Ingredients

Egg, fresh, 1 extra large
Butter, salted, 2 Tbls
Cheddar Cheese, 4 oz
Onions, raw, 0.25 cup, chopped
Heavy Whipping Cream, 2 tbsp
Spinach, frozen, 1 package (10 oz) yields
Whipped Cream Cheese, 6 tbsp
Grated Parmesan, 1 Tbls
Nutmeg, pinch
Cayenne, pinch
Salt, to taste
Directions
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a small baking dish (I used a 9X6).
Place spinach in a medium saucepan with enough water to cover. Bring to a boil. Lower heat to simmer and cook until spinach is cooked, about 3 minutes. Remove from heat and set aside.
Drain spinach; mix all remaining ingredients into spinach.
Transfer the mixture to the prepared baking dish. Bake in the preheated oven 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Cool before serving.
