Introduction

Number of Servings: 6

Ingredients

    8 oz. Jumbo Shells
    1 lb. Ground Beef
    2 tbsp. Extra Virgin Olive Oil
    6 oz. Baby Spinach (chopped)
    1 c. Onion (finely chopped)
    1 clove Garlic (minced)
    1 tsp. Salt
    1/4 tsp. Ground Black Pepper
    1 dash Nutmeg
    1 Egg
    1/4 c. Grated Parmesan Cheese
    26 oz. Tomato Sauce

Directions

Preheat Oven to 350 degrees.

Cook Jumbo Shells and drain. Leave 1/2 cup water reserve with pasta.

While pasta is cooking, cook Ground Beef in skillet for 4 minutes or until no longer pink. Drain Grease.

Add Oil, Spinach, Onion, and Garlic to the beef. Add some of reserved water until all ingredients are blended. Continue cooking on skillet for 10 minutes. Remove from heat. Add final seasonings. After mixture cools, stir in Egg and Parmesan Cheese.

Pour 1 cup of Tomato Sauce into a 13x9 in. baking dish.

Fill Jumbo shells with meat mixture and place into dish. Pour remaining sauce over all shells. Cover with foil and bake for 30 minutes.
