Ingredients

    4 catfish fillets (about 5 ozs each)
    1 cup Japanese breadcrumbs (known as Panko)
    2 tablespoons chopped fresh parsley
    2 teaspoons grated lemon rind
    1 teaspoon minced garlic
    1 teaspoon salt
    2 tablespoons butter (sweet-unsalted)

Directions

Combine Japanese breadcrumb (Panko), parsley, lemon rind and garlic in a small bowl. Place fillets on a lightly greased wire rack in a baking pan and sprinkle evenly with the salt. Spoon breadcrumb mixture evenly onto the fillets, pressing down gently. Drizzle with the melted butter, place in oven and bake at 375° for 20 minutes or until breadcrumbs are golden and fish flakes with a fork.
