Introduction

Ingredients

    4 catfish fillets (about 5 ozs each)
    1 cup Japanese breadcrumbs (known as Panko)
    2 tablespoons chopped fresh parsley
    2 teaspoons grated lemon rind
    1 teaspoon minced garlic
    1 teaspoon salt
    2 tablespoons butter (sweet-unsalted)

Directions

Combine Japanese breadcrumb (Panko), parsley, lemon rind and garlic in a small bowl. Place fillets on a lightly greased wire rack in a baking pan and sprinkle evenly with the salt. Spoon breadcrumb mixture evenly onto the fillets, pressing down gently. Drizzle with the melted butter, place in oven and bake at 375 for 20 minutes or until breadcrumbs are golden and fish flakes with a fork.
