Ingredients

Zucchini, 2 medium
Grated Parmesan Cheese, 1/2 cup
Onions, raw, .50 cup, chopped
Garlic-minced 2 tsp
Italian Turkey Sausage (sweet), 16 oz
Bacon (Low sodium) 8 slices (I did try this recipe with turkey bacon-it wasn't nearly as yummy as with the 'real' thing.)

Directions
1) Cut zucchinis in half, lengthwise.
2) Remove seeds to form a hollow in the pulp.
3) Place 2 slices of bacon in the bottom of each hollow.
4) Mix sausage, garlic, and onions. Take mixture and distribute between the four zucchini halves, on top of the bacon.
5) Place 2 slices of bacon on top of the sausage (2 slices per zucchini half).
6) Place 1/8 cup parmesan cheese on top of each half.
7) Bake at 350 degrees for 20-30 minutes or until sausage is done and cheese is slightly browned.
8) Once removed from the oven, split into 8 servings and serve.
9) You can eat the skin, if you choose. If not, scoop out the pulp as you dig in!
