Ingredients

    1-1/2 pound (680 grams) fresh green beans
    Six medium tomatoes (about 26 ounces or 740 grams)
    1/3 cup olive oil
    3 tbsp balsamic vinegar
    4 cloves garlic
    1 tbsp Italian seasoning

Directions

Slice the ends off the beans, cut them in half, and then steam them about 6-8 minutes until crisp-tender. Cut up the tomatoes into bite-size pieces, saving the juice. Whisk together the olive oil, vinegar, and garlic. Mix the steamed beans and tomatoes, sprinkle the Italian seasoning over them, and then pour the oil mixture over the vegetables. Toss to coat. Makes twelve servings of 10, 4" green beans and 1/2 of a tomato each.

    Very Good
    I halved this recipe, used ACV instead of Balsamic, and then tossed it all into a pan and heated it over medium for 5-8 minutes. Very tasty. - 9/2/09
