Introduction

Delicious layered Mexican pie. Delicious layered Mexican pie.

Ingredients

    6 whole-wheat tortillas
    1 lb extra lean ground turkey (97% fat free)
    1 4-oz can green chiles
    1 can fat free refried beans
    1 can black beans
    1 can no salt added corn
    4 cups reduced fat fiesta blend shredded cheese
    2 cups salsa
    1 small can sliced black olives
    1 green onion, chopped
    cumin, chili powder, oregano, garlic powder, salt, pepper to taste

Directions

In skillet, brown turkey meat. Add green chiles. Season to taste with cumin, chili powder, garlic, salt and pepper. Set aside. In a large glass Pyrex baking dish, lay two tortillas flat, side by side, doing your best to cover the bottom of the dish. Spread the refried beans across the bottom. Spread half of the cooked meat over the beans, and cover with cheese. Lay down two more tortillas, and spread black beans and corn evenly over the tortillas. Top with meat, then more cheese. Lay down last two tortillas. Cover with salsa and remaining cheese, then sprinkle olives and green onion over the top. Bake in the oven until heated throughout and cheese is bubbly. Cut into 15 pieces (or more, if you like).

    I made this dish for a potluck at work. It was a hit. Everyone ate it up. We added sour cream and shredded lettuce to the side. - 3/24/10

    Very Good
    This recipe was very filling and delicious! For a simpler and less spicy version, I cut out the green chiles and substituted one package of taco seasoning for the spices. The cooking directions are vague, but I baked at 350 for about 30 to 35 minutes and everything turned out great. - 2/3/14

    Very Good
    My family enjoyed this, I added rotel instead of salsa, used fat free cheddar cheese and my local grocery only had flour tortillas. I also mixed a can of rotel in the ground turkey and used taco seasoning, nobody knew it wasn't ground beef! Win for me! - 11/4/13
