Introduction

A few cans, some chopped onion and basil...very yummy! A few cans, some chopped onion and basil...very yummy!
Number of Servings: 3

Ingredients

    1 tsp olive oil
    1 -2 cloves garlic
    1/2 cup chopped onion
    1 can (10.75 oz )Campbell's Healthy Request Tomato Soup
    1 can (14.5 oz) Italian Stewed Tomatoes
    1 can (10 oz) diced tomatoes with chilis
    1/2 cup chopped fresh basil

    3 Tbsp Greek Yogurt
    3 tsp pamesan

Directions

Cook onion & garlic in olive oil until soft...about 5 minutes. Add rest of ingredients and cook 5 minutes. Put all into a food processor or blender and blend until thick and smooth.

Before serving, stir in 1 T Greek yogurt and sprinkle with 1 teaspoon parmesan cheese.

Makes 3 1 cup servings (good served with a grilled cheese sandwhich cooked on the George Forman grill)

    I skipped the Greek yogurt and substituted 1 Tablespoon dried basil for the fresh. Delicious and filling. Good for weight watchers at only 4 points per serving. 1/3 of this recipe is more than a cup, actually. - 8/6/09
