Introduction
Chock full of healthy vegetables. You can subsitute any meat and use any vegetables on hand. Serve with rice or just eat plain. (Rice not included in nutritional info) Enjoy! Ingredients

1 T. EVOO (Extra Virgin Olive Oil
1/2 cup onion, chopped
1 Lg. Jalapeno pepper, seeded and chopped
1tsp red pepper flakes
1 inch ginger root, peeled and grated, or 1 tsp powdered
2 garlic cloves, chopped or 1tsp. garlic powder
5 medium baby carrots, chopped
1 Chicken breast, no skin or bones, cut into thin strips
1/2 T. Lite Soy sauce
1 T. Hoisin sauce
1/2 cup tap water
1 stalk or 1 cup of Bok choy, cut into bite sized pieces
1 Cup Fresh mushrooms, sliced
1 Cup Fresh green beans
1 Cup Fresh Broccoli
Directions
Slice chicken into thin strips and chop all vegetables into bite sized pieces.
Heat large skillet and add Olive Oil.
When heated, add onion, red pepper, ginger and garlic and cook about 1 minute to flavor oil.
Add carrots, chicken and soy sauce and cook approximately 5 minutes or until chicken cooked through
Add Hoison, water and rest of vegetables and cook until heated through, about 5 minutes
Nutritional value will change with protein choice and vegetables, but all in all is a healthy meal.
