Ingredients

12 oz pork roast (shoulder)
1 1/2 c diced green pepper
1 1/2 c chopped onions
3 jalapenos, finely chopped (more or less according to taste)
1 hot red pepper, finely chopped. or 1 T pepper flakes
3 c chopped tomatoes
3/4 tsp Morton Light Salt
1 c black beans, cooked from dry or canned and rinsed
16 whole wheat 6" tortillas - low carb
1 c shredded Mexican cheese blend
16 T Fat free sour cream
Directions
Cube pork roast, chop onions, tomatoes and peppers.
Pre soak and partially cook dry black beans, or use canned and rinse and drain well.
Place vegetables, beans and salt in crock pot, add pork. Cook on high for one hour, on low for 5-6 hours. When the pork is tender, use forks to shred meat. Wrap tortillas in foil and heat in oven. Serve with a little cheese on top, add 1 T of fat free sour cream. Serving is 2 tacos, or use larger tortillas for 1 burrito per serving.
I serve with brown rice cooked with a little prepared salsa (not included in nutritional information)
