Introduction
This recipe is a version of my aunt's Thanksgiving corn casserole -- always the favorite. It's tweaked with fresh sweet corn and buttermilk, which makes it a bit sweeter, and impossible to stop going back for seconds! Friends of mine have eaten whole batches alone for a meal! Ingredients

2 cups fresh sweet corn (3-4 regular sized ears)
1 low sodium can of cream style corn (14.5 oz)
1 box of corn muffin mix (Jiffy or other brandm 8.5 oz box)
1 cup (or 1 pint) low fat buttermilk
2 tbsp. melted light stick butter
Directions
Preheat oven to 400 degree, and spray a 9x13 glass dish.
Cut kernals from fresh sweet corn until you have 2 cups (usually will be 3-4 ears of corn). Place in mixing bowl, add the rest of the ingredients (do not drain cream of corn can!) and stir until completely mixed and pour into dish.
Bake 40-50 minutes, depending on oven. I usually wrap foil over the middle of the mixture at 40 minutes or when the edges start to brown, to help the middle portion firm up, but that's not necessary if you prefer a softer version.
