Ingredients

    1 1/4 cup all-purpose flour
    3/4 cup Quaker Enriched Corn Meal
    1/4 cup sugar
    2 teaspoons baking powder
    1/2 teaspoon salt (optional)
    1 cup of skim milk
    1/4 cup of Vegetable oil
    2 egg whites or 1 egg, beaten

Directions

Heat oven to 400 degrees. Grease 8 or 9 inch pan. Combine dry ingredients. Stir in milk, oil, and egg, mixing just until dry ingredients are moistened. Pour batter into prepared pan. Bake 20 to 25 minutes or until light golden brown and wooden pick inserted in center comes out clean. Serve Warm.

    this ALWAYS comes out perfect and moist. So easy to throw together. Just make sure you use a 8" X 8" pan - I use a glass one (corning). I also undercook it just a bit - about 19 minutes. - 6/19/13

    It's good; it dries out fast. Will make 24 1" square pieces.
    Why do the 2 recipes vary so widely in nutrients? The other one looks bigger in every category.
