Ingredients

    1 Large Cucumber - peeled, seed center removed and chopped
    1/2 med raw red onion - chopped
    5 rawred bell pepper stripps - chopped
    5 raw yellow bell pepper stripps - chopped
    4 garlic cloves - chopped finely
    4 tbsp extra virgin olive oil
    4 tbsp balsamic vinegar
    .5 tsp sea salt
    1 tsp black pepper
    1/4 cup fresh basil finely cut

Directions

Chop up all ingredients as directed. In one bowl mix all ingredients and stir well. You can refrigerate for 30 mins if you want it to be a little chilled. Serve w/ pita chips or toasted bread.
