Ingredients

    1 1/2 to 2 pound pork tenderlion-all fat removed
    3 cloves of galic-sliced
    1 cup chopped onion
    1 tablespoon olive oil
    2 tablespoon white balsamic vinegar
    4-5 sprigs fresh rosemary



Directions

1.Cut slits in pork roast and insert peeled garlic slices
2. Heat oil in skillet, add onions and brown. Remove
3. Put roast in skillet and brown on all sides.
4. Add balsamic vinegar,and rosemary sprigs, turn roast to coat in juices.
5. Put roast in oven proof pan, pour juices from skillet and put onions over roast.
6. Bake in 350 degree oven until done(about 2 hours).

Makes 5 4oz servings.

    Well cooked with a mellow flavor. I would have liked a stronger flavor but my whole family at it which is a success over here! - 12/2/07
