Introduction

This recipe was given to my mother on a cruise. She immediately fell in love with the cake. However, due to the ginormous amount of calories and fat, you would not want to eat this cake often.
IDEA: THESE CAKES WOULD MAKE A GREAT SUBSTITUTE FOR A BIG CAKE BECAUSE YOU CAN TRACK YOUR CALORIES.

Number of Servings: 10

Ingredients

    11 oz. Semi-Sweet chocolate
    11 oz. butter
    7 large eggs
    3 oz. sugar
    4 oz. flour

Directions


Makes: 10 cakes

Preheat oven to 400 F.

Whisk half the eggs with all the sugar for a few minutes, then add the flour. Whisk in the rest of the eggs until the mixture is well blended.

Melt chocolate and butter together over boiling water, stirring occasionally with rubber spatula. (will become thin and runny)

In same bowl, add egg mixture in very small amounts, whisking constantly until batter is thoroughly mixed.

TIP: THIS IS CALLED TEMPERING. IF YOU ADD THE EGG MIXTURE TOO QUICKLY, THE EGG MIGHT START TO COOK AND THE BATTER WILL BECOME LUMPY.

Spray ramekins with nonstick cooking spray and divide batter evenly among the cups.

Bake 15-20 minutes
(In my oven, 15 mins was perfect at 400F)

    This is very similar to my own recipe, thanks for adding it. Sometimes an extra workout is worth it for a treat this good! I use quality chocolate of the 70% cocoa variety. - 1/3/10
