Ingredients

1.5 lbs chicken breast
1 cup grapes
1/2 cup pecans
2 sticks of celery (chopped)
2 TBS mayo
1/2 cup of greek yogurt (I chose fat free)
1 tbsp agave nectar
2 tsp apple cider viniger
2 tbsps poppy seeds
Directions
Makes 6 1 cup serving
Cook chicken in oven at 375 degrees. Place in a shallow pan with .5 cup of water. Cover with foil. Bake for 25 minutes
Mix all other ingredients together in a large bowl. Place in fridge.
When chicken is done, allow it too cool before chopping into pieces.
Mix yogurt mixture with chicken and add salt and pepper to taste!

I made some changes (replaced greek yogurt w/ Amande almond yogurt, poppy seeds w/ chia, vinegar w/ lime juice, & agave w/ honey), but I thought it tasted pretty good anyway! I probably cut back too much on the yogurt (halved it), and I forgot to season it, but that was my fault, not the recipe's. - 4/18/13
