Ingredients

3/4 Cup Egg Beaters
1/4 Cup diced red bell pepper
1/4 Cup diced green bell pepper
3/4 Cup frozen broccoli florets
2 Cups fresh spinach
1/4 Cup Kraft Fat Free Cheddar Cheese
Cooking spray for pan
Directions
Makes one generous breakfast serving.
Heat non-stick pan over medium heat. Dice bell peppers and saute for 2 minutes, just until starting to soften. Add frozen broccoli and cover, toss with peppers to thaw quickly, about 2 minutes or so. Add fresh spinach and cover, tossing frequently to wilt spinach. Once spinach has reduced, pour in the Egg Beaters and cook until they are to your preference. Sprinkle cheese on top, cover and turn off the heat. Let rest for 1 minute more in pan to allow cheese to melt. Salt and pepper to taste. Serve and enjoy!
