Ingredients

    1 OroWheat Sandwich thin
    3 oz Broccoli Cole Slaw (comes prepackaged in the produce section, can also use regular shredded cabbage coleslaw if you prefer)
    2 tbsp 1000 Island Dressing
    1 Slice swiss cheese
    t tbsp creamy dijon mustard
    1 chicken breast, boneless, skinless

Directions

Put chicken breast in a ziplock bag and pound it thin with a meat mallet.

Place chicken in a shallow baking dish and coat each side with the mustard, spreading it on thinly shouldn't take more than 1 tbsp of mustard. Add salt/pepper to taste.

Bake for about 25 minutes at 400 degrees. (opt: you can also grill this on a foreman grill but the mustard tends to burn before the chicken is done so if you use this option, don't baste with mustard until the very end)

Toss broccoli slaw or coleslaw with 2 tbsp 100 island dressing.

Toast the sandwich thin or bread of your choice but don't forget to adjust nutrition info for different bread. The sandwich thin only has 100 calories and only has 16 net grams of carbs which is perfect for the diabetic.

Place chicken breast on one half of the sandwich thin, top with cheese and then the broccoli slaw and the other half of the bread. Enjoy!!
