Introduction

Ingredients

    2 lbs fresh green beans
    4 Tbsp lemon juice
    2 Tbsp olive oil
    4 garlic cloved, minced
    1 tsp crushed red pepper
    1/2 tsp salt
    2 Tbsp sesame seeds

Directions

clean the beans and cook (or steam) them until they are done but still have some 'bite'. - rinse beans in cold water to stop cooking.
Put beans in a mixing bowl.
combine lemon juice, olive oil, garlic, crushed pepper and salt (I use a stick blender) - pour over beans.
In a small pan roast sesame seeds and pour over beans.
Gently mix evey few minutes to let the flavors blend.
I like to keep mine at room temperature - it usually does not get very old ... refrigerate later.

makes 8 - 4 oz servings

    I made these, they great. I did not have enough lemon juice, so I supplemented it with some rice wine vinegar, and I did not bother using the hand held blender, just mixed the dressing in the bowl and added the steamed green beans. I didn't have any sesame seed, but I left those off. - 8/13/14

    I brought thisto a bar-b-que at the beach today and the more healthy eaters loved it. I added three large garlic cloves and that turned out to be too much. Our garlic here is really strong since we are one town over from Gilroy - the garlic capital of the world! I can't wait to make it again! - 5/29/10
