Introduction

Looking for something to kill my craving for chicken tacos I ended up creating a tasty salad with chicken that tastes as Chicken Tacos!! Ingredients

    1 Chicken breast, no bones, no skin, ready to cook
    1/2 tbsp olive oil
    1/2 tbsp butter, reduced fat
    a pinch of Chicken seasoning
    100 grms or a cup of Frozen Veggies mixture
    100 grms or a cup of Romain Lettuce, chopped
    1 tbsp sour cream, reduced fat
    1/4 cup water
    25 grms or a thin slice of Manchego Cheese, recuden fat

    SALSA
    1 small tomato
    1/4 slice onion
    a pinch of salt
    1/4 cup water
    if you want it spicy add some hot pepper

Directions

Put in a pre-heated small pan the olive oil, be sure it covers it all, I usually use a napkin to spread it all, then put the chicken breast, you can add here any seasoning, I used Tone's Canadian Chicken Seasoning, it gives the chicken a terrific taste! Once you have it seasoned turn it around and wait for it to turn into a lighter color, reduce the fire at the minimum capacity and cover the pan, let it cook.

Grab another small pan and put there the frozen veggies, the water and the butter, again the fire in minimum capacity and cover the pan. The aim here is give the veggies a slight butter taste.

Lets make the salsa!! put the tomato, water, onion, salt and if you want the pepper into the blender. Once it is all blended grab a small pan where it fits and put it on a high fire. Move it constantly.

While you do all of these keep in mind check once in a while how the chicken and the veggies are going.

As soon as the chicken breast is cook (pinch it with a fork to look how is the meat in the middle, inside should has the same color as outside) distribute the cheese slice over it, let it brown if you want to or just turn off the fire.

When the veggies are defrosted and the butter is mixed with the water, mixed all and take off the cover, wait for the water to consume and they are done!

Once the salsa has become thick its ready!

Now time to hide that chicken! Place the chicken beast, now with the cheese all melted in the place and say goodbye! its the last time you are gonna see it LOL... Cover it all with the lettuce then put the salsa all over it and over the top the sour cream, the veggies can go with the lettuce if you want to but I decided put them aside, and there you go! Grab your fork and its time to find your Chicken! Enjoy :)
