Introduction

This is one of my favorite summer breakfasts. It has soy protein, fresh vegetables, fruit, and whole grains all in one bowl. I love it plain, but it would be terrific with chopped parsley, mint or basil added. This is one of my favorite summer breakfasts. Ingredients

    1 lb package frozen, shelled edamame
    1/4 c. finely diced celery
    1/4 c. finely diced carrot
    1/4 c. finely diced red or yellow bell pepper
    1/4 c. finely diced red onion
    1/2 c. dry rolled oats
    3 oz raisins
    1/2 c. orange juice
    2 T olive oil
    2 T red wine vinegar

Directions

Place all ingredients in a large bowl and toss to mix. Serve chilled or at room temperature.
