Ingredients

    crust:
    1 cup whole wheat flour
    1 cup white flour
    1/4 cup butter
    water

    filling:
    1 red onion, thinly sliced
    2 Tbsp olive oil
    2 large zucchini, sliced
    6 oz mozzerella cheese, shredded
    2 Tbsp fresh basil, chopped\
    3 eggs, beaten
    1 1/4 cup skim milk
    salt and pepper to taste


Directions

Preheat the oven to 400 degrees. Mix the flours together and rub in the butter until the mixture resembles crumbs, then mix to a firm dough with cold water.

Roll out the pastry and use it to line a 9-10 inch tart or pie pan. prick the bottom and chill for 30 min. then line with paper or foil, and fill with dried beans. Bake in oven on a baking sheet for 20 min, uncovering the crust for the last 5 min sothat it can crisp up.

Meanwhile, saute the onion in the oil for 5 min, until it is soft. Add the zucchini and fry for another 5 min. Spoon the mixture into prepared pie crust. Scatter most of the cheese and all of the basil on top.

In a bowl, beat together the eggs, milk, salt and pepper. pour over the filling. Top with the remaining cheese.

Turn oven down to 350 degrees and bake for 40 min, until risen and just firm to the touch in the center. Allow to cool slightly before serving
