Ingredients

8 oz raw shrimp (peeled, deveined and tails removed)
2 Italian tomatoes, chopped
1 small onion sliced
3 tbsp (1 1/2 oz or 1 shot) tequila
2 tbsp lime juice
2 tbsp coarsely chopped cilantro
1 tsp minced garlic
1/4 tsp chili powder
1/4 tsp salt
Directions
Makes 2 servings
Bring a large fry pan or wok with nonstick cooking spray to medium heat.
Add onion and garlic and cook til onion is slightly transparent (about 3 minutes).
Carefully add tequila to the pan making sure not to drip onto heat or flame of stove. It's highly unlikely it will flare up, but be on alert.
Cover and simmer for about 5 minutes.
Add shrimp and cook for about 3 minutes until shrimp are nearly opaque.
Add tomatoes, lime juice. cilantro, chili powder and salt and mix well.
Stir occasionally allowing the tomatoes to softened and shrimp to cooked through, about 2 minutes.
