Introduction

Ingredients

1 tbsp Olive Oil
2 links Chicken sausage
1 small onion chopped
4 cloves Garlic, minced
1 Leek, chopped
4 cups Chicken Broth
2/3 cup Water
1 cup Red Wine
1 can stewed tomatoes
1 cup Carrots , chopped
.5 tbsp Dried Basil
.5 tbsp Dried Oregano
1 cup Tomato Sauce
12 oz Cheese Tortellini
2 Bell Peppers, sliced
Directions
In a large pot, heat oil over med-high heat. Add sausage, onions, and garlic. Saute until sausage is cooked.
Add stock, wine, water, tomatoes, carrots, leek, basil, oregano, and tomato sauce. Bring to boil. Reduce heat to low and simmer for at least 30 minutes (the longer it simmers, the better it will taste).
Turn up heat and return to a boil. Add tortellini and peppers. Boil until tortellini is tender. Turn off heat and allow to cool before serving.
Makes 8, 2 cup servings
