  • Very Good

This was really good. Used tricolor quinoa, green pepper with the onions and added diced cherry tomatoes when I put in the beans. I also used Penzy's Adobo Seasoning instead of just Cumin. Served with kale salad and it was delicious! Didn't use the corn but would be good too! - 1/11/14

Delicious. I didn't add the corn instead I added 2t garlic, 1/4 c fresh tomato and dice red onions to the black beans, cooking covered on low until the added veggies got tender. - 9/4/09

  • This is a very tasty dish. I love the kick it has with the cayenne. I didn't have black beans so I used kidney beans and it was really good. - 5/14/13
