Ingredients
-
1 can (about 2 cups) Old El Paso Fat-Free Refried Beans
6 tablespoons (or more, to taste) salsa
6 La Tortilla Factory Whole Wheat Low Carb tortillas
6 tablespoons chopped fresh cilantro (optional)
4 1/2 ounces (a little over 1 cup) Kraft Free Shredded Cheddar Cheese (or any non-fat shredded cheese)
Directions
FILLING:
1) Chop cilantro (if using) and set aside.
2) Thoroughly mix salsa and refried beans together in a bowl. This filling keeps well in the refrigerator if you want to make it in advance. Assemble and heat the burritos when mealtime arrives.
ASSEMBLE:
3) Divide bean mixture between tortillas and place in a line across the center of each tortilla, leaving enough space at each end to fold the sides over the bean mixture.
4) Sprinkle with cheese and cilantro.
5) Fold each side over ends of bean mixture and bring lower side of each tortilla up and over the bean mixture. Roll up, keeping the ends tucked in.
6) Place on a microwave safe plate and microwave each serving (2 burritos) for 40-60 seconds or until heated through.
Makes 6 burritos, each burrito is about 150 calories.
