Ingredients

    3 c cooked brown rice
    3 c cubed grilled chicken breast (approx 1 lb)
    2 medium green apples, diced
    1 medium red bell pepper, diced
    2 large celery stalks, finely chopped
    2/3 c chopped green onions
    1/2 c chopped pecans
    3 T minced fresh parsley
    1/4 c cider vinegar
    3 T olive oil
    1 T lemon juice
    1 t salt
    1/4 t pepper

Directions

In large bowl, combine rice, chicken, apples, bell pepper, celery, onions, pecans, and parsley. In separate smaller bowl, mix remaining ingredients. Whisk together briskly to mix. Pour over other ingredients in big bowl and toss to coat. Serve immediately, or refrigerate.
