Ingredients

    2 Half's Chicken Breast
    8 Carrots
    1 cut Broccoli
    2 TBSP chopped onion
    1 tsp Olive Oil
    1/2 cup Brown Rice (dry)
    1 Cup Water

Directions

Pour rice in baking dish with water, olive oil, the veggies, rosemary and lay chicken on top. Bake at 350 Degrees for approximately 90 minutes or until chicken is done.
Cut chicken into cubes and stir with veggies. Makes 4 1-cup servings.

    I tried this with mushrooms. I have never used Rosemary before, I used too much. It was good though. I will make it again. - 1/14/11
