Ingredients

    Broccoli, 10oz, frozen (substitute spinach or zucchini if desired)
    Bisquick
    Fat Free Sour Cream
    Fat Free Cottage Cheese
    Egg Substitute
    Butter (use margarine for lower fat content)
    1 Tomato
    Grated Parmesan Cheese
    Non-stick Spray

Directions

Grease lightly a square baking dish (8 x 8 x 2")
Spread broccoli in dish.
Mix sour cream, cottage cheese, Bisquick, butter and eggs (works best with hand beater ) for one minute
Pour over broccoli.
Arrange tomato slices on top, sprinkle with Parmesan cheese.
Bake until golden brown and knife inserted in center comes out clean (about 30 minutes).
Serves 6-8
