Promise Fat Free Margarine, 1 tbsp
Apple Butter, 1 cup
Dixie Crystals Light Brown Sugar, 3/4 cup
Applesauce - Musselmans, unsweetened, 3 Tablespoons
Raisins, .5 cup, packed
Cultured Fat Free Buttermilk, 1/2 cup
Egg substitute, liquid (Egg Beaters), 1/4 cup
Vanilla Extract, 2 tsp
*Organic All-Purpose White Flour, 2 cups plus 2 Tablespoons
Baking Soda, 2 tsp
Cinnamon, ground, 2 tsp
Ginger, ground, 2 tsp
Allspice, 1 tsp
Salt, 1/4 tsp
Directions
Preheat oven to 350°F.
Coat an 8-inch square cake pan with nonstick cooking spray.
Melt butter in a small saucepan over medium heat; swirl the pan until the butter turns a nutty brown, about 1 minute. Pour into a large bowl. Add apple butter, brown sugar (breaking up any lumps) and applesauce and whisk until smooth. Add raisins, buttermilk, egg substitute and vanilla; mix well. Add flour, baking soda, cinnamon, ginger, allspice and salt; whisk until just combined.
Transfer the batter to the prepared baking dish and bake until a knife inserted in the center comes out clean, 35 to 40 minutes. Let cool for 10 minutes before serving.
