Introduction

I add a large dollup of Greek-style yogurt to my bowl when served. I add a large dollup of Greek-style yogurt to my bowl when served.
Number of Servings: 6

Ingredients

    1 medium onion, chopped
    1 clove of garlic, pressed or chopped
    2 large stalks of celery, chopped
    1 cup carrots, chopped
    4-1/2 cups water
    1-1/4 cups dry lentils
    1 bay leaf
    1 Tbsp garam masala
    1 can pureed pumpkin
    3/4 cup coarse bulgar
    1 10-oz pkg frozen spinach
    salt and pepper to taste

Directions

Heat oil over medium heat in 3-quart saucepan. Add onions and saute for 5-10 mins. Add garlic, celery, and carrots sauteing until they begin to brown. Add water, lentils, bay leaf, pumpkin, and garam masala. Bring to a boil, then reduce heat to low and simmer covered for 20 mins. Add bulgar and cook about 20 mins. Add salt and pepper to taste and water to desired thickness. Add spinach and simmer for 5-10 minutes. Divide into 6 servings.
