Introduction

One dish. Simple. Yummy. My kids like this dish. I learnt this recipe from my paternal grandma. She had a lot of children and said this was an often fix in her household while gramps was off working - he was a door-to-door salesman. One dish. Simple. Yummy. My kids like this dish. Ingredients

    Chicken Breast, no skin, 8 breast, bone and skin removed
    10 cups *Brown Rice, medium grain
    3 cans Sliced Carrots
    3 cans Cream of Chicken Soup (low sodium -or- low-fat)

Directions

I am not sure of the exact cooking time.

Wash chicken breats off in cold water, put in crock pot. Turn crock pot on HIGH. Add Rice. Add soup. Add appropriate amount of water for the rice, and THEN add 3 cans of water for the soup. When the chicken and rice have cooked for at least an hour, pour whole can of carrots in, usign the liquid too. Stir. Continue cooking.

I have not made this in this fashion in such a long time, I cannot recall the amount of time it takes to cook the chicken through completely. You may have to add more water as this dish cooks.

To test doneness fish out a piece of chicken, if it falls apart - GREAT! It's done!! If it doesn't fall apart, set it on a plate and cut it open. If it is no longer pink, it's done. You can also opt to test the internal temp of the chicken, if you know how to do that... I don't so I won't give instruction on THAT area. You also need to make sure the rice is fully cooked.

To serve:
Fish out a piece of chicken, if whole, and plate it. then scoop out some carrot and rice mix. Serve.

IF chicken has broken up, stir to mix everything up real good, and then dole out to everyone a scoop at a time, trying to make sure everyone gets some of everything.

This is a delishious, creamy fulfilling recipe. I hope you will try it.
