Ingredients

    2 cups water
    2.5 cups peeled, diced potatoes
    .5 cup chopped onion
    .5 cup sliced carrots
    .5 cup sliced celery
    .25 cup butter
    .25 cup flour
    1 tsp salt
    1 tsp pepper
    2 cups milk
    1 can creamed corn
    6 oz shredded parmesan cheese
    6 oz smoked salmon

Directions

add first 5 ingredients to a large pot. bring to boil, turn down heat to a simmer, cover and cook for 12-15 minutes. (DO NOT DRAIN) In another pan melt the butter, stir in the flour, salt and pepper until smooth. add the milk gradually, stirring and cooking for a 2 minute boil until thickened. Add to the veggies and water. Stir in creamed corn, cheese and salmon. Heat for another 10 minutes or so until heated through. Makes about seven 1.5 cup servings

    Good chowder, but I believe the calculations are off. I used more water than in the recipe, and had 5 servings, not 7. 460 in 1.5 cups, not 323. - 1/20/15

    Totally Yummy! Even those that won't eat the smoked salmon on its own gobbled it up. Plus, I cut the calories and fat by using olive oil and non-fat evaporated milk. I have a photo, trying to figure out how to post it...might just end up on my SparksPage. - 9/1/09
