Ingredients

    2-3 Zucchini or Squash
    1 Large Onion
    1 Large Tomato
    3 Cloves Garlic
    3tsp freshly grated Ginger
    1 cup Frozen Corn Kernels
    1 Tbsp Salt
    3 Tbsp Canola Oil

Directions

Cut and cook all ingredients in a large skillet until vegetables are soft about 15-20 minutes. Tastes great with Roti or Pita Bread!
