Ingredients

2 Cans Black Beans (leave one can undrained)
1 Can of Water
1/2 Cup Salsa
3/4 Cup Chopped Onions
1/2 tbsp Cumin
1/2 tbsp garlic powder
Low-Fat Sour Cream (Optional)
Low-Fat Shredded Cheese (Optional)
Avocado (Optional)
Tomatoes (Optional)
Note: Cumin and Garlic Powder may be substituted with 1 tbsp cayenne powder
Directions
(1) Mash one can of beans with potato masher or food processor.
(2) Pour both cans of beans into medium saucepan.
(3) Add water, salsa, cumin and garlic powder, and bring to a boil.
(4) Cook 10 more minuted, or until soup has thickened.
(5) If desired top with shredded cheese, sour cream, avocado and tomato
Serves: 6 1-cup servings
