Introduction

Ingredients

2 lbs Sausage, Italian Hot
0.5 Cup Onions, raw, chopped small
2 oz Anchovies, King George Flat Fillets
1 Tbsp Capers, Paesana Non Pareil
0.5 Cup Peppers, sweet, red, raw, chopped small
2 Tbsp Pepper, black
2 Tbsp Basil, Fresh leaves (or 1 Tbsp Dried)
6 cloves Garlic, minced
6 Cups Tomato Sauce Basic
Directions
1. Brown the Italian sausage and drain off the excess oil.
2. Add the rest of the ingredients except the Tomato Sauce (Onions, Red Pepper, Black Pepper, Basil, Garlic & Anchovies).
3. Cook together for about 10 minutes, until the veggies are wilted.
4. Add the Basic Tomato Sauce and continue cooking for another 10 minutes.
After cooking the Italian sausage, in addition to draining off the excess oil, I will also drain the excess oil off the cooked sausage meat. Lining a colander with several sheets of paper towels, I spoon the sausage into the colander and then blot off the excess oil. Before returning the sausage to the pan, I will blot off the excess oil in the pan. I use the same pan because there is a lot of flavor left in the pan after cooking the sausage.
Adjust the seasonings to your taste. We like Hot Italian Sausage, but plain Italian Sausage or even Ground Beef can be used.
